It's awesome that you're going to write a story in one of the fandoms I requested. My prompts gave you some idea of why I like these fandoms, so what follows is a more general idea of the sort of story I enjoy.
Things That Make Me Happy
I love angsty stories and hurt/comfort. I love banter. I love competent characters behaving competently. I love plotty stories. I love character studies. I love happy endings. I like unhappy endings, if they're of the magnificently tragic variety. (The unhappy ending thing would probably only work with Wings of Desire.) I prefer slash, but like gen. I'd even be willing to read Damiel/Marian het in Wings of Desire, but no Gutterman or Pappy with the nurses in Black Sheep, please. With slash, it's the emotional intimacy that matters more than the physical, though I wouldn't turn down some rousing physical intimacy. While I most want to see the characters listed, I am fond of seeing other characters in the fandoms and how they interact with the guys I love best. And I'm not averse to OC's, if they're well drawn and essential to the plot.
Things I Can Do Without
I do not get MPreg, am not fond of crack!fic, song!fic. I dislike seeing competent characters acting stupidly, or strong characters made into whimpering children. I'm iffy on BDSM.
In the end, I hope you write something that gives you joy. That's sure to bring me joy as well.

Black Sheep Squadron (tv)
Capt James Gutterman/Maj Greg Pappy Boyington
Anything concentrating on Gutterman and his relationship with Pappy, whether that's mentor/mentee or goes in a more slash direction. I like the friction between them, the way they can fight and still obviously care about each other. Perhaps one of them is MIA on a mission? Perhaps Pappy gives an order Gutterman really doesn't like. Whatever the situation, there should be respect, and an underlying affection between them.
Wings of Desire
Cassiel/Damiel
I love the push and pull between Cassiel and Damiel, the way Damiel is willing to throw himself into mortal life, while Cassiel feels intensely, but can't quite make the leap. Maybe a vignette set after Damiel crosses over, with Cassiel following his friend. Maybe a story set when they're both still angels, possibly during WW II. Slash not necessary, but not unwelcome. And a guest appearance by Nick Cave would be awesome.
The Mentalist
Kimball Cho
Anything involving Cho. I most love how stone-faced he is about anything life, or Jane, throw his way. I also am intrigued by the hints we get at his back story. So maybe a young!Cho story, when he learned to be reserved. Or Jane getting under his skin and almost getting him to lose it. Gen or slash, I'm good with anything.
RPF - Top Gear UK
Richard Hammond
I primarily love Hammond, his general joy at life, and willingness to get stuck into whatever wacky challenge gets thrown at him. Maybe set after he comes back to the show, post-accident. Maybe a missing scene from the lorry episode, with Hammond and May razzing Clarkson. Gen, slash, with Jezza, Captain Slow or the Stig, it's all good.
